- 2 tablespoons ghee
- 1 bunch asparagus, chopped (reserve a few tops for garnish)
- 1 bunch watercress
- 1 avocado (set aside a few slices for garnish)
- ½ cup chopped flat-leaf parsley
- 2 cups hot water
- 2 tablespoons lemon juice
- 1 teaspoon freshly grated ginger
- ½ teaspoon coriander powder
- Pinch of asafoetida
- Salt and pepper to taste
Directions:
- In a medium soup pot, heat the ghee. Add ginger, coriander, and asafoetida, sautéing for 1–2 minutes until fragrant, stirring frequently to prevent burning.
- Add the asparagus and cook for 3–4 minutes until tender. Lower the heat, add watercress, and cook for another 2–3 minutes.
- Transfer everything to a blender, then add avocado, parsley, lemon juice, and water. Blend until smooth and creamy, tasting and seasoning with salt and pepper as needed.
