Beetroot & Quinoa Patties Recipe | Gluten-Free & Vegan

Wholistically simple at its best!

These vibrant Beetroot & Quinoa Patties are packed with wholesome ingredients, fresh herbs and plenty of flavour. Naturally gluten-free and vegan, they’re an easy addition to lunches, dinners or meal prep for the week ahead.

Serve them with creamy garlic hummus and a generous squeeze of fresh lemon for a simple, nourishing meal.

Makes: 5–6 patties

Ingredients

  • 1½ cups raw beetroot, shredded
  • 1½ cups cooked quinoa
  • ½ cup cooked chickpeas
  • ⅔ cup fresh herbs, roughly chopped (we love a combination of parsley, basil and coriander)
  • ½ cup red onion, finely chopped
  • 2 teaspoons ground cumin
  • Salt and pepper, to taste

Method

  1. Add the shredded beetroot, cooked quinoa and chickpeas to a food processor. Pulse until just combined. You still want a little texture, so be careful not to over-process.
  2. Transfer the mixture to a large bowl and add the fresh herbs, red onion, cumin and seasoning.
  3. Using clean hands, mix everything together until well combined.
  4. With slightly wet hands, divide the mixture and shape into 5–6 patties, pressing each one firmly together.
  5. Place the patties in the refrigerator for at least 30 minutes. This helps them firm up and hold their shape while cooking.
  6. Preheat your oven to 180°C.
  7. Heat a lightly oiled frying pan or grill over medium heat. Cook the patties for approximately 2 minutes on each side, or until lightly golden.
  8. Transfer to the oven and cook for a further 8 minutes, or until heated through and firm.

To Serve

We love these patties served warm with garlic hummus and a generous squeeze of fresh lemon.

You could also add a crisp green salad, roasted vegetables or tuck them into a wrap with plenty of fresh herbs for an easy lunch.
