Gluten Free Vegan Cauliflower & Chickpea Pakoras Recipe

Guys we have been so busy getting our business off the ground we haven’t had time to post many recipes of late, and that is what this page is really all about.

Here is a wonderful easy recipe for Vegan Pakoras, made by my husband Raku. We really hope you enjoy!

What you’ll need:

2 cups chickpea flour
3 teaspoons ground coriander
3 teaspoons ground cumin
3 teaspoons garam masala
2 teaspoons turmeric
1 teaspoon chilli powder
1 teaspoon sea salt
Big handful of chopped fresh coriander
1/2 cup of water
1 large onion, finely chopped
1 cup frozen peas
1 cup cauliflower florets chopped in tiny florets
Sea salt
Good quality oil for frying

What to do:

Preheat oven to medium heat about 140 degrees
Mix the chickpea flour with the spices (coriander, cumin, garam masala, turmeric, chili powder, and salt). Add the water to make a stiff paste.
Mix onion, peas, coriander and cauliflower into batter. Add extra water or flour to make the batter thick enough to hold vegetables together.

Warm oil to a moderate heat in a heavy based frying pan.Using a dessertspoon, pick up spoonfuls of the mixture into the pan carefully. Shallow frying the patties takes about 3-1/2 minutes on each side, browning nicely (but don’t undercook or vegies will be raw).
Place on an oven dish lined with paper towel, keep in the oven on to keep warm and cook through for another 10 minutes.
Note: you can also add grated potato, carrot or sweet potato to the mix.
