Protein & Fibre Banana Bread

Made with ripe bananas, oats, almond meal, chia seeds and an extra boost of protein, it’s a more nourishing take on classic banana bread without losing the part that matters most: it still tastes delicious.

Ingredients
- 3 very ripe bananas, mashed
- 2 eggs
- ⅓ cup maple syrup
- ¼ cup extra virgin olive oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup almond meal
- 1 cup rolled oats, blended into a coarse flour
- ½ cup vanilla or unflavoured protein powder
- 2 tablespoons chia seeds
- 2 tablespoons ground flaxseed
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- Pinch of sea salt
- ¼ cup unsweetened almond milk, plus a little extra if needed
- ⅓ cup roughly chopped walnuts, optional
- 1 banana, halved lengthways, for the top
Method
- Preheat your oven to 175°C and line a loaf tin with baking paper.
- In a large bowl, mash the bananas until mostly smooth. Add the eggs, maple syrup, olive oil and vanilla, then whisk until combined.
- Add the almond meal, blended oats, protein powder, chia seeds, flaxseed, cinnamon, baking powder, bicarbonate of soda and sea salt.
- Pour in the almond milk and gently fold everything together until just combined. The batter should be thick but spoonable. Add another splash of almond milk if it feels too dry, as different protein powders absorb different amounts of liquid.
- Fold through the walnuts, if using.
- Spoon the mixture into your prepared loaf tin and smooth the top. Place the halved banana on top, cut-side facing upwards.
- Bake for 45–55 minutes, or until golden and a skewer inserted into the centre comes out mostly clean.
- Allow the banana bread to cool in the tin for around 15 minutes before transferring to a wire rack.
Make it your own
Add a handful of dark chocolate chips for something a little sweeter, swap the walnuts for pecans, or add pumpkin and sunflower seeds for even more crunch.
For an easy breakfast, warm a slice and serve it with Greek or coconut yoghurt, nut butter and fresh berries.
