Healthy Apple Slice Cookies Recipe
Ingredients

2 crisp apples

3–4 tablespoons natural peanut butter or almond butter

2 tablespoons chopped almonds or walnuts

1 tablespoon pumpkin or sunflower seeds

1 tablespoon shredded or desiccated coconut

1 tablespoon cacao nibs or finely chopped dark chocolate

½ teaspoon cinnamon

Optional: a small drizzle of honey or maple syrup
Method

Wash the apples and slice them horizontally into rounds, around 5–7mm thick.

Carefully remove the core from the centre of each slice. You can use a small knife or round cutter to create a hole in the middle.

Spread each apple slice with a layer of peanut butter or almond butter.

Sprinkle over your choice of nuts, seeds, coconut, cacao nibs and cinnamon.

Add a very light drizzle of honey or maple syrup if you’d like a little extra sweetness.
